This winter island residents are turning to food for more than just sustenance. We’re sharing cooking ideas and recipes on Facebook groups, joining the Atheneum for their Yummy Monday Zoom gatherings, finding camaraderie in trading tips and ingredients, and now we are all watching Chef Felino Samson’s Winter Cooking Series called “The Beet Cooks On.”
“We can’t travel this winter, so travel with us through our food,” comments Felino as he brings his viewers to China, Italy, and beyond. The first episode, which premiered on January 20, features Sichuan Broccoli & Tofu. Chef Samson talks about where the dish originated and discusses ingredients and what each adds to the dish, all while he cooks in his open kitchen at The Beet, open year-round at 9 South Water Street. Viewers can see his technique, hear special tips, and watch how each dish develops. The recipes are posted on The Beet website for those who’d like to try their hands at preparing each one at home. You’ll also find the featured dishes on their menu, if you’d rather just watch and savor.
Episode 2, from January 26, shows how to prepare Squid Ink Risotto, and in episode 3, which premiered last Wednesday, February 3, Chef Samson demonstrates how to use fresh fish to make a Crispy Fish Sandwich that is sure to become a family favorite. Next Wednesday’s episode he will show viewers how to prepare a Valentine’s Day classic: Chocolate Pot de Creme.
Viewer can tell from watching episodes of The Beet Cooks On (all are available on YouTube), that Host Chef Samson has a talent for teaching and enjoys sharing his knowledge and skill. Beet Co-Owner Amy Young directs the episodes and offers beverage pairings. They both enjoy sharing their expertise and offering entertainment during these quiet winter months. They’re gratified at the positive feedback they’ve been receiving from their fans, and appreciate the Rock Solid Grant from the Nantucket Chamber of Commerce NICE initiative that made it possible to produce the cooking series.
Samson and Young met eight years ago while working at Cru, and, two winters ago in 2019, they decided to collaborate and open The Beet. Their talents and personalities mesh perfectly to offer delicious, healthy food in a warm, welcoming, and upbeat atmosphere.
Amy and Felino share their passions for good food, travel, and fun by giving customers superb hospitality and international flavors at every meal. They have become known as the place for fabulous, freshly prepared food and quick service. Their selection of creative cocktails, sake, wine, beer, and hard cider is designed to complement their offerings.
New this winter, in addition to their cooking show, is a Family Meal they prepare as take-out for two people or four people. The selection changes every week, always featuring a special pasta or risotto accompanied by fresh tri-color salad. Dessert can be added on, as can a wine pairing. Family Meals must be preordered by 2pm for pickup between 5 and 8 pm.
Like eateries all across the country, they were challenged in 2020 by the pandemic and by special state and town restrictions. Young and Chef Samso were able to offer new outdoor patio dining on the walkway alongside The Beet during warmer months, and they added curbside pickup so patrons could safely order their favorites to enjoy at home or at the beach. In addition, they’ve added air filters and table barriers now that indoor dining is again permitted.
