
Mario Mazza, the Vice President and General Manger at Mazza Vineyards explains the process. “We leave the grapes freeze on the vine, they actually naturally dehydrate and develop really wonderful, sweet, additional flavor characteristics. they hang on the vine. Some years we get them off late November , a lot of years in December but a lot of years it’s moved into January more and more but we picked these, typically they are frozen again this year they are not but we will take them, they will still make a unique dessert style wine”, says Mazza
